| Shish Kabobs are nice and can be prepared ahead of time and grilled when your guests arrive. I skewer chunks of marinated lamb (for a super easy marinade use Wishbone Italian dressing with fresh chopped dill, mint and oregano added)with onions, peppers & tomatoes. Shrimp kabobs can have wedges of fresh pineapple and tomatos and chicken kabobs (marinate chicken for an hour in wet margarita mix, then sprinkle with chili seasoning before grilling) are nice, as well. Even a veggie kabob with zucchini, summer squash, onions, mushrooms, etc. (you could use the recipe for the lamb marinade) A wild rice salad with mandarin oranges, dried cranberries, slivered celery, scallions, almonds and an orange vinegrette or a rice pilaf would make nice accompaniments. Another idea is some jazzed up salads, such as lobster or shrimp salad, chicken Waldorf salad (chicken chunks, cubed apples, celery, sliced seedless grapes, walnuts & mayo), some deviled eggs and a cold sliced beef tenderloin with a horseradish sauce or sweet and sour meatballs (heat and serve in a crock pot). Serve with small rolls, maybe a pasta salad, potato salad and/or fruit salad and some killer desserts! |
