Re: Make ahead lasagna

Hello, all,

I am having some friends over on Wednesday night for dinner. I plan on serving lasagna, and I have heard that this is a great make ahead meal because it re-heats very well. I would like to make it on Tuesday evening and then cook it on Wednesday. Do I cook it on Tuesday and just re-heat on Wednesday? Or should I make it on Tuesday and refrigerate, and then cook it on Wednesday?

Any thoughts?

I would make it Tuesday, refrigerate it, and bake it Wednesday. Do it a bit ahead; I find things like that improve and are easier to serve if they sit a bit.

But if for some reason it's easier for you to bake it Tuesday, too, and reheat it Wednesday, that will also work fine.

When you bake lasagna it should sit for at least 30-45 minutes after it comes out of the oven so it does not fall apart when you cut and serve it.

Also, never cover lasagna with aluminum foil. It will dissolve and leave little flecks on your lasagna. Ask me how I know...
