Fat Tuesday Potluck Ideas

We decided to have a potluck at my work for Fat Tuesday, but not everyone is sure of what to bring. We'll have a sign up sheet for the dishes, but we have more people than I can think of dishes. What would you add to this list:
Jambalaya
Gumbo
King Cake
Red Beans and Rice
Corn Bread
Salad
Soda

Beignets, if you are lucky enough to know anyone who can make them. And I guess put chicory in the coffee. I also think of "po' boy" sandwiches, shrimp or crawfish etouffee, trout Marguery, grillades, Bananas Foster, and bread pudding with whiskey sauce.

If you care about being super authentic, a lot of the stuff you mentioned I think is really more Cajun than New Orleans cuisine. But I doubt your guests will be picky about that when it tastes so good!

When we visited New Orleans years ago I picked up a collection of recipe cards:

Shrimp creole
chicken jambalaya
crawfish etoufee
red beans and rice
seafood gumbo with file
beignets
pralines
oyster artichoke soup
blackened redfish
hush puppies
cajun smothered okra
dirty rice

If you want any of these recipes, let me know. Sounds like a fun theme and I'm sure you'll end up with a great spread of food.
