Diabetes Recipes

If you like Chocolate, here are two recipes....smile!

Low Carb Chocolate

Melt a few squares of dark unsweetened baking chocolate in the microwave. (30 seconds at a time)

remove and stir until melted. add in some splenda to taste, and light cream (6%). microwave again if needed. pour into a tupperware or plastic container and put in the fridge to cool and solidify.

for alternate, you can add in unsweetened coconut and roll the mix into balls for macaroons.

or,

add in some peanut butter, stir then roll into small balls. then roll the balls into light hotcocoa powder.

CHOCOLATE FUDGE PEANUT BUTTER PIE

40 carbs per serving

Here is how I broke it down

Sugar Free Cool Whip (8 oz) 25 servings at 3 carbs each or 75 carbs in total

No Sugar Peanut Butter (2 cups), 4 carbs per 2 tbs, 2 cups equals 32 tbs or 64 carbs in total

Jello Sugar Free Pudding, 8 servings at 8 carbs each or 64 carbs in total

Graham cracker shell, 8 servings at 14 carbs each or 112 carbs in total

8 servings into 315 carbs total

(When I make this, I plan to make it in a plain tin pan and dump the graham cracker shell I bought, so that brings it down to 25 carbs per serving

Diabetic Recipes: The above recipes sound really good and I've found a difficult time finding diabetic recipes that don't contain large amts of carbs. I'm glad I found you!

Betty, would you know the calories on that? Looks like a good Weight Watchers dessert for me...I love peanut butter!

Sorry to hijack the thread, but do you like living in The Villages? My cousin is going to look at homes there in about 2 weeks. I'm coming down in mid-March to Orlando, and would also like to look at them.
