RECIPE: Ice Box Fruit Cake

I got this recipe off of another list and made it a couple of weeks ago. we've really been enjoying it, so thought I'd share it here :-) I didn't have Brazil nuts so used cashews instead (macadamia nuts would be good, too). I used the food processor to grind the cookies into crumbs and chop the fruits, and next time I'll use the processor to chop the nuts too, since they should be pretty small.

Don't let the "fruitcake" name scare you off LOL.

Ice Box Fruit Cake

4 cups vanilla wafer crumbs (1 lb box crushed)

2 cups chopped brazil nuts

2 cups chopped pecans

2 cups chopped walnuts

1 lb candied cherries -- chopped

1/2 lb candied pineapple chopped

1 cup fresh or frozen coconut

1 can sweetened condensed milk

Mix all and pack into waxed paper lined pan or dish. Cover and

**I usually make this mid-November and freeze and serve throughout the

holidays. It is very sweet and tastes like candy.
