LOOKING for: Refrigerated Cookie Dough?

I need to take some cookies to a cookie walk later this week, but I won't have a lot of time to bake then. I'm looking for a recipe that I could make up, probably tomorrow (Monday), and then bake Thursday evening.

Or could I use any of my regular recipes like that? I really like the peanut butter recipe I use - would there be any reason why I couldn't mix it up Monday evening, store in my refrigerator, and then bake them on Thursday evening?

No and they will be easier to cut to size and shape if you roll them up into plastic wrap. You can even freeze them but will need to let them warm up enough to slice.
