RECIPE: Snowy White truffles

Thought I would share a wonderful recipe as I have taken a few of the recipes from here and need to add to this exchange...
12 Oz. white chocolate chips
1/4 c. heavy whipped cream
1/4 c. cream of coconut
1 tablespoon butter
2 tablespoons creme de cocao, optional

Coating:
12 Oz. white chocolate chips
2 Tablespoons shortening
3 1/2 c. coconut flakes

for filling:
Process first chocolate in food processor. Leave in processor.
In a small saucepan, heat and stir whipping cream, cream of coconut, and butter until hot but not boiling.
Remove from heat and with processor running, carefully, pour hot mixture into white chocolate until smooth.
Transfer to a bowl and chill until firm.
Shape into balls and freeze.

In a 4 c. glass measuring cup combine second chocolate with shortening and place in container with very hot water, stirring until mixture melts. Takes about 20 minutes.
Dip frozen balls in melted chocolate and roll in coconut. Place on paper lined sheet pans.
Chill for 10 minutes, until set. Makes about 60
