| Here's a molasses bar cookie with frosting that I like. FROSTED MOLASSES BARS Bars: 1 1/2 cups flour 1 1/2 tsp baking powder 1/4 tsp baking soda 1/2 tsp salt 1 tsp cinnamon 1/2 tsp ground cloves 1/2 cup butter, softened 1 egg 1/2 cup molasses 1/3 cup water Frosting: For the bars: in a medium bowl, combine the flour, baking powder, baking soda, salt, cinnamon & cloves. In a large bowl, cream the butter & sugar. Beat in the egg, molasses & water & stir in the dry ingredients, blending well. Turn into a greases 11x7" baking pan & bake in a preheated 350° oven for 20-25 minutes. Let cool while preparing the frosting. |

| You're welcome but if you just want a molasses cookie, you could dab the icing above on the cookies. JOE FROGGERS (makes 24 4" cookies) 4 1/3 cups flour 1 tsp baking soda 1/2 tsp salt 1 1/2 tsp ground ginger 3/4 tsp ground cloves 3/4 tsp nutmeg 1/4 tsp ground allspice (I've omitted this before) 3/4 cup shortening 3/4 cup sugar 1 cup light molasses 1 TBL rum extract (I've substituted vanilla) 1/3 cup water Sift the flour, baking soda, salt, ginger, cloves, nutmeg & allspice into a medium bowl & mix. In a large bowl, cream the shortening & sugar. Add the molasses & rum extract, beating well. Add the flour mixture & water alternately, beating well after each addition. Wrap the dough in foil & chill overnight. |
