The best& easiest coconut cake I have found is to just bake a plain white cake mix according to directions, let it cool & poke holes in it with a wooden spoon, then pour cocount milk over it. For icing I mix together 8 oz of softened cream cheese & 1 cup powered sugar then stir in 1 cup cool whip & spread over the cake & sprinkle with coconut. add cherries & green frosting leaves for color.

Here is a recipe I've made a few times and it's really easy and delicious.

It's made with a box mix, (just a warning in case you don't want to use a mix)

COCONUT CREAM CAKE

1 box white cake mix
1 can sweetened condensed milk
1 can cream of coconut
1 c. whipping cream
Coconut

Bake cake mix as directed in 9 x 13 inch pan until done. Then punch holes all over the cake when it comes out of the oven. Mix can of sweetened condensed milk and can of cream of coconut together and pour over hot cake. Sprinkle coconut on top and let cool. Whip 1 cup of whipping cream. Top with whipped cream and more coconut. Store in refrigerator.
