There are actually 2 fruitcake threads still "live" on the harvest forum. Fruitcakes 2 is on the first page and if you do a search on "fruit cake" you'll find the original as well.

If you can tell us a bit more about what you're looking for the members might be able to provide something specific. How do you define "easy"? Would you like to begin with a mix? Do you prefer candied fruit or dried? Alcohol or alcohol free? Dark or light?
