RECIPE: Pecan Brown Sugar Shortbread

Quick, easy, good

1c all purpose flour

1 stick unsalted butter

1/2c packed light brown sugar

1 1 /4c finely chopped pecans

Preheat oven to 300°. Mix all ingredients with hands until it resembles coarse meal. Pat into an ungreased 9" square pan. Pierce with fork every 2"

BAke 40 minutes or til light brown.

Cut into squares while still warm.

    Funniest thing, my husband is taking our pecans to be shelled this AM!! Gotta replenish my stash for the upcoming year. LOL

    To a place here in town that machine shells pecans. They have a little gift shop and sell pecan stuff too. Took in 17# today so should be in good shape and never know, might even share some!! LOL

    Anytime, Ginger! Just don't blame me when the clothes no longer fit-LOL! Know you don't like them but we made some really good Gingerbread cookies when we were at our son's for Christmas.

    I can ask a dumb question?

    1 1 /4c finely chopped pecans

    Is that One AND a quarter cup of nuts (which sounds like too much) or just 1/4 cup of pecans?

    I never realized that these are so similar to what I call "Butter Balls" and others call "Mexican Wedding Cakes" - really scrumptious! (Someone pointed out the similarity somewhere today on either the R/E or the C/F - anyway, this would be easier, you don't have to roll, and roll, and roll!)

    My Mexican Wedding Cakes call for white sugar though and these use brown so you have a bit of a different flavor, Woodie.
