| I’m looking for a pumpkin spice bar recipe for my husband’s work potluck. I google-searched some recipes and found some that LOOK good, but all mentioned that they are more like fluffy and cake-like than bars. I definitely want something that is finger food and will not need forks or be crumbly/messy. Nuts and raisins good too. For the same reason if it needs frosting I’m thinking a glaze rather than what these recipes suggest, which is cream cheese frosting.
I’m not sure how to adapt a recipe to make it less fluffy and more dense and chewy.
Pumpkin Spice Bars
1. Heat oven to 350°F. Lightly grease bottom and sides of 15x10x1-inch pan with shortening. In large bowl, beat eggs, granulated sugar, oil and pumpkin until smooth. Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves. Stir in raisins. Spread in pan.
1 cup all-purpose flour

| Sure it's a little too late, but I've made this one before and it's delicious! Ooey Gooey Pumpkin Bars Cake: Filling: fresh whipped cream, for serving 1. Preheat oven to 350 degrees F. 2. Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan. 3. To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey. Serve with fresh whipped cream |
