RECIPE: Recipe Oatmeal Jumbos

Here is a good oatmeal cookie recipe. My husband has a problem with cinnamon and doesn't like it in his oatmeal cookies. It is a crispy cookie.

Oatmeal Jumbos

1 1/2 cups all-purpose flour
1 cup butter (2 sticks) softened(not spread or margarine)
1 1/4 cups granulated white sugar
1/4 cup light brown sugar packed
2 teaspoons vanilla extract
1 1/2 teaspoons baking soda
1 teaspoon salt
2 large eggs (room temperature)
3 1/2 cups old fashioned oats (uncooked)
Raisins or chopped nuts or both or none. Optional Anything you desire maybe chocolate chips

Into a large bowl measure all ingredients except the oats with mixer at low speed. Beat until blended. Occasionally scraping bowl with spoon. Stir in oats and if desired raisins or nuts or anything desired. About 3/4 cup each.

Preheat oven to 350 degrees. Shape a level 1/4 cup dough into balls and place about 2 inches apart on un-greased cookie sheet, do not flatten. Bake about 15-17 minutes until golden. Carefully remove cookies to wire rack to cool. Repeat with remaining dough. After cooled, store in tightly covered containers. Makes 1 1/2 dozen. Glenda

Can't have too many oatmeal cookie recipes. Too bad no cookie stays crisp down here too long but this sounds great!
