RECIPE: Salba Energy Cookies

I created this recipe to replace the protein bars I had been eating for snacks at work. Salba is an ancient Aztec grain, which is the new craze in health food. It is also called white chia.

Salba Energy Cookies

l stick of butter, + 2 tablespoons

4 tablespoons cocoa

1/8 teaspoon cinnamon

1/3 cup of brown sugar

1/2 cup of white sugar

1 egg

1 teaspoon vanilla

1 cup of white flour

1 teaspoon baking soda

dash of salt

2 tablespoons of white chia seeds (salba)

1/2 cup of chocolate chips

1 cup of chopped walnuts

Drop cookies by teaspoonful on parchment paper covered cookie sheet. Bake at 325 degrees for 10-12 minutes. The cookies do not spread out. They keep nicely for a week. Two cookies provide energy (without sugar lows) for about three hours.
