RECIPE: Ranger cookies?

Posted by carla17 (My Page) on

My GM used to make these wonderful cookies and I think they had cornflakes and coconut in them. There could have been more cereal, I'm not sure. If anyone has this recipe, I would appreciate it.

Thank you,
Carla

RE: RECIPE: Ranger cookies?

There are many variations on this cookie. Here is one recipe. Some folks add chocolate chips, peanuts or other nuts.

Ranger Cookies

3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup vegetable shortening
1 cup granulated sugar
1 cup packed brown sugar
2 cups old-fashioned rolled oats
2 large eggs
2 cups crisped rice cereal
1 cup sweetened flaked coconut
1 teaspoon vanilla extract

Preheat oven to 375*F (190*C)
In medium bowl combine flour, baking soda, salt and baking powder, mixing well, set aside.

Cream shortening and sugars until fluffy; add eggs and vanilla, beating well. Stir in flour mixture, stir in oatmeal, rice cereal and coconut.

Drop by tablespoonfuls onto lightly greased baking sheets and bake for 12 minutes or until edges are lightly browned. Transfer to wire racks to cool. Store in airtight container.

Makes 3 dozen.
