RECIPE: moonbeam�s chocolate no-bake cookies

1/2 cup (1 cube) butter or margarine
2 cups granulated sugar
1/8 teaspoon salt
1/4 cup (4 tablespoons) baking cocoa
1/2 cup milk
1 tablespoon vanilla
3 cups quick oats
1/2 cup coconut
1 cup peanut butter (optional)
1/4 - 1/2 cup raisins or peanuts (optional)
Waxed paper, parchment paper, or Tinfoil


1. Melt butter or margarine in a heavy saucepan over high heat. Add sugar, salt, cocoa, and milk.

2. Bring the mixture to a rolling boil. Reduce the heat to medium high. Stirring constantly, Boil for approx. 1�2 minutes until mixture reaches the Soft-ball Stage at 235� F (passes the Cold Water Test).
3. In the meantime, measure vanilla, oats, coconut, and optional ingredients. Put in bowl and set aside.
4. Lay out approximately 2 feet of Waxed paper, parchment paper, or Tinfoil.
5. Immediately remove boiling mixture from the heat and turn off the stove when mixture reaches the Soft-ball Stage (passes the Cold Water Test). Quickly add oat mixture and stir until combined, mixing well after each addition.

6. Work quickly to drop tablespoonfuls of cookie mix on the paper or foil. They will not spread; leave just enough space between cookies so they don't touch.

Let cookies cool until they are firm and easily removed from the paper or foil before serving.
Store in an airtight container with parchment paper between layers.

If you don't have a candy thermometer, use the Cold Water Test.
If candy does not pass the Cold Water Test, continue cooking until it does.

I found this on THS/GW:

Some of the posts have strange figures and squiggles in them.....mainly the recipe thread, or anything using fractions.

If you go to view or options or whatever it takes to get to "encoding" Change it from Western to Unicode.

The strange things disappear.

My recipe is almost the same only no soft ball stage.


2 cups sugar
1/2 cup butter or margarine
1/2 cup of milk
6 tablespoons cocoa
Bring to a full boil over med. heat. Remove from heat and stir in
1 cup coconut
2 cups rolled oats.
Stir well
Drop by teaspoonsful on to buttered wax paper. Work quickly before they cool. Let cool and place in a container with wax paper between layers. Store in a covered container in the fridge or a cool place.
