RECIPE: Pecan Pudding

Yummy!
3 eggs
1c dark colored corn syrup
1/2 c sugar
2 T butter
1 tsp vanilla
1/2c flour
1/8 tsp cream of tartar
1c chopped pecans
Powdered sugar
Half and half/light cream
Grease a 2 qt square baking dish. In a small mixing bowl beat eggs for 5 minutes until thick and lemon colored.
Add syrup, sugar, butter and vanilla-mix well.
In a small bowl stir together flour and cream of tartar. Fold in egg mixture and add 1/2c pecans. Pour into prepared dish, top with remaining pecans and bake at 375° for 30 minutes. Spoon into dessert dishes, sprinkle with sifted powdered sugar and cream. May serve warm or cold.
Yield: 6-8 servings.

That sounds good. What's the texture like?

It doesn't set up like a pecan pie-a thinner consistency but almost as good and you can use your cream and save on the crust calories! LOL
