RECIPE: Pecan Pudding

Yummy!
3 eggs
1c dark colored corn syrup
1/2 c sugar
2 T butter
1 tsp vanilla
1/2c flour
1/8 tsp cream of tartar
1c chopped pecans
Powdered sugar
Half and half/light cream
Grease a 2 qt square baking dish. In a small mixing bowl beat eggs for 5 minutes until thick and lemon colored.
Add syrup, sugar, butter and vanilla-mix well.
In a small bowl stir together flour and cream of tartar. Fold in egg mixture and add 1/2c pecans. Pour into prepared dish, top with remaining pecans and bake at 375 for 30 minutes. Spoon into dessert dishes, sprinkle with sifted powdered sugar and cream. May serve warm or cold.
Yield: 6-8 servings.

That sounds good. What's the texture like?

It doesn't set up like a pecan pie-a thinner consistency but almost as good and you can use your cream and save on the crust calories! LOL
