| Eskimo Cookies
3/4 cup Butter or margaraine
3/4 cup Sugar
3 tblsp. Cocoa
1 tblsp. Water
1/2 tsp Vanilla
2 cup Old-fashioned rolled oats
Sifted powdered sugar to coat cookies, approximately 1-1/2 cups.
Stir sugar and cocoa together. Add butter, water, and vanilla—rub mixture with fingers until texture is crumbly. Stir in rolled oats.
Refrigerate for 1-2 hours. Use teaspoon for measure, roll into balls and roll in powdered sugar. Store in the fridge.
