Does anyone have a real good tried and true recipe for a plain vanilla coffe cake with a nice crumb topping. A friend requested this and I've looked through so many recipes but can't decide which sounds best. Thanks for any help you all may give. Geri |

| Hi, here's one that I've been making for years - as an interesting note, it is from a friend who is an opera singer! Streusel Coffeecake 1/3 cup butter Crumb topping: Cream butter, sugar and egg together. Mix dry ingredients, add alternately with milk to creamed mixture. Beat until smooth. Pour into greased and floured 9x9 pan. Cut butter into dry ingredients, mix until crumbly. Spoon over batter. Bake at 350 for 40-45 minutes. Cindy |

| I can sure vouch for the recipe below. It's very good. If you want it plainer, just don't put the layer of filling in & just put it on top with the rest of the streusel. |

| Being making this cake for over 20 years. One of my son's favourites. Ann Cherry Coffee Cake 2 1/4 cp all purpose flour Preheat oven to 350°F Combine flour and sugar in large bowl. Cut in butter until mixture is crumbly. Set aside 1/2 cup of mixture. To remainder add baking powder and soda. Combine egg and milk. Add to dry ingredients, stir just until moistened. Spread two-thirds of the batter over bottom and part way up side of greased 9 inch springform pan. Spoon pie filling over batter. Drop spoonfuls of remaining batter over filling. sprinkle with reserved crumb mixture. Bake for 50 to 55 minutes or until done. |
