| 1 envelope unflavored gelatin
1/4 c cold water 3/4 c orange juice 1/3 c sugar 1T grated orange rind 1 T lemon juice 1 1/2 c whipping cream, whipped Sprinkle gelatin over cold water in a small nonaluminum saucepan and let stand one minute. Add orange juice and next 3 ingredients. Cook over low hat stirring until gelatin and sugar dissolve. (about 2 minutes) Pour into a large bowl and chill until the consistency of unbeaten egg white. Fold in whipped cream and chill. Spoon into serving dishes. A nice light dessert for this time of year.
