Had this for dessert at a friend's last weekend & it was wonderful. She gave me the recipe.
BUTTERSCOTCH SQUARES (serves 8)
1 cup flour
1/4 cup rolled oats
1/4 cup brown sugar
1/2 cup butter
1/2 cup chopped nuts
12 oz jar butterscotch topping
1 qt ice cream

Combine flour, oats, brown sugar. Cut in butter until mixture resembles coarse crumbs. Stir in nuts. Pat mixture intoa 13x9" pan. Bake in a preheated 400° oven for 15 minutes. Stir will warm to crumble; cool.
Spread 1/2 the crumbs in a 9x9x2" baking pan; drizzle about 1/2 the butterscotch topping over the crumbs in the pan. Stir ice cream to soften. Spoon carefully into the pan. Drizzle remaining topping over the ice cream then sprinkle the remaining crumbs on top. Freeze.~~

(Trust me, this is a keeper)

With the oats and in spite of the other things, it sounds healthy to me too, Ginger! LOL
Thanx.
