Whenever I am looking for a large dessert to take along to meetings and such, this is the one I always turn to.
Cake layer:
2c all purpose flour
2 tsp baking powder
1c sugar
1/8 tsp salt
1/2 c butter
1c milk
2 beaten eggs
2 tsp vanilla
Fruit layer
fresh or frozen unsweetened fruit of choice-apples, peaches, berries, apricots, plums, etc.
Topping
1/4 c melted butter
3/4 c all purpose flour
3/4 c sugar
Blend flour, baking powder, sugar, salt, and butter in a large bowl. Stir in milk, eggs, and vanilla.Spread in a well greased jelly roll pan (17x11x1"). Cover with fruit of choice. Combine topping ingredients until crumbly. Sprinkle over fruit and bake at 375° for 30-35 minutes.
Yields: 40 squares.

| Hey, it doesn't have raisins in it either! I bet it would work with our local fruit too. |

Roselin, I can use this for sure for our family gatherings. Would it work with fruit combinations also? Or do you recommend just one type of fruit be used? |

Marlen, go ahead and use whatever fruits you want. Since we have peach and apricot trees, that is what I usually use but any fruit or combination should work just fine. RL` |
