LOOKING for: Fresh Apple Cake

I used to make a fresh apple cake where you diced up fresh apple and added it to flour, sugar, oil and I think cinnamon. There were possibly other ingredients, but when the batter was mixed, it was real thick. It was a very good cake and I have lost the recipe. Does anyone have the recipe and would you care to share? Thanks!

My favorite!! The refrence to "cake gravy" is the sauce that goes on it....that's what my son called it!

    Apple Cake

    4 cups chopped apples
    1 ½ cups sugar
½ cup raisins ( I use chopped other fruit like dried peaches or apricots)
Mix and let sit for about an hour ( less is OK)
    2 cups flour
    ¾ tsps soda
    ¾ tsps BP
    ¾ tsps salt
    1T cinnamon
    ¼ tsp nutmeg
    Mix dry ingredients
    2 eggs
    ¾ cups veggie oil
    1 tsp vanilla
    beat together
1 cup chopped pecans if desired.
Add the oil and eggs to the apples and sugar and dried fruit. Stir in the dry mixture and add nuts if desires.
Pour into greased 9 by 13 pan and bake 350 until doneÂ..40 to 50 minutes.
    Serve with cake gravy!

    Cake Gravy
    Mix 1 cup sugar
    1 stick butter
    ½ cup evap milk
    1 tsp vanillaÂ.
Mix all and cook all in a sauce pan for about 3 minutes.
    Serve warm over the cake.

    ===================================
    Buttery Apple Cake

Source: Savoring Italy by Michele Scicolone

1/2 cup plus 1 tablespoon unsalted butter
3 Apples (Golden Delicious) peeled, cored, and cut into slices 1/4 inch thick
    2/3 cup all-purpose flour
    1/2 teaspoon baking powder
    1/2 teaspoon salt
2 whole eggs, plus 1 egg yolk
    1 teaspoon vanilla extract
    1 cups granulated sugar
    1/2 teaspoon grated lemon zest
    confectioners sugar

Note: I used Red Delicious Apples
. Preheat oven to 375°. Generously butter a 9 inch round cake pan with 2
    inch sides.

In a large frying pan over low heat, melt the butter. Pour 6
tablespoons of it into a small bowl or cup and set aside. Add the
apple slices to the butter remaining in the frying pan and cook,
stirring occasionally, until the apples are tender, about 10 minutes.
    Removed from the heat.

In a small bowl, stir together the flour, baking powder, and salt. In
a large bowl, beat the whole eggs and egg yolk until blended. Add the
6 tablespoons melted butter, the vanilla, the granulated sugar, and the
lemon zest. Stir in the flour mixture and the apples. Spoon into th
    prepared pan, smoothing the top.

Bake until the cake is browned, 30 to 35 minutes. Transfer to a wire
rack and let cool in the pan for 5 mintues. Invert the cake ont a plate
and lift off the pan, then invet the cake again onto the rack and let
    cool completely.

Just before serving, place confectioners sugar in a small sieve and
dust the top of the cake.

This is the apple cake recipe my family asks for the most. It has the very thick batter you are looking for. It tastes great and keeps very well.

    3 cups all-purpose flour
    2 cups sugar
    1 cup salad oil
    1 tsp baking soda
    1 tsp salt
    1 tsp cinnamon
    2 1/2 tsp vanilla extract
    3 eggs
3 heaping cups peeled and chopped granny smiths
    1/2 cup raisins
    powdered sugar

Preheat oven to 325 degrees. Spray w/Pam 2- 8" square cake pans, set aside. In a large bowl with a mixer on low speed, add first 8 ingredients scraping bowl frequently till mixed well. STIR in apples and raisins. Divide the batter between the 2 pans equally. Bake for 1 hour. Cool on wire racks. Sprinkle with powdered before serving. This cake can be cut into bars or squares or served as a whole cake. Enjoy! NancyLouise
