I'd suggest white chocolate macadamia cookies but it sounds like macadamias are already covered. How about this: COCONUT PECAN SQUARES Crust: 1/2 cup butter 1/2 cup dark brown sugar (packed) 1 cup flour. Cream butter w/brown sugar & add flour. Mix well. Press mixture into a greased 8x8" pan, spreading dough evenly into the corners. Bake in a preheated 350° oven for 20 minutes. Topping: 2 eggs 1 cup light brown sugar (packed) 1 cup coarsely chopped pecans 1/2 cup coconut, mixed with 2 TBL flour 1 tsp vanilla Dash of salt Powdered sugar Beat eggs well. Add brown sugar & beat until thick. Stir in pecans & coconut. Add vanilla & salt. Mix well. Spread over crust. Bake at 350° for 20 minutes or until well browned. Sprinkle with powdered sugar & cool. Cut into 1" squares.~~Bound to Please PINEAPPLE BLUEBERRY COBBLER 1 fresh pineapple 1 1/2 cups fresh blueberries 1 1/2 cups sugar 1 cup self-rising flour 1 cup milk 1 stick butter, melted 1 tsp cinnamon, ground 1/4 tsp ground ginger 1/8 tsp ground nutmeg Peel, core & cut up pineapple into bite-sized chunks. Add to fresh blueberries. Sprinkle 3/4 cup sugar over fruit & then mix together. Set fruit mixture aside. In a large bowl, mix flour, 3/4 cup sugar, spices & milk. Place melted butter in 2 qt pan. Pour flour mixture over butter. Place sweetened fruit mix over flour mixture. Bake in a preheated 350° oven for about 1 hour or until brown.
