LOOKING for: Luau Party

Hello, We are having a huge outdoor Luau. Several of us volunteered to bring desserts. There won't be room for any refrigeration I'm afraid.

Several ladies said they'd be bringing Carrot Cake with Macadamia nuts and coconut.

Can anyone offer something different for me to make? We only need a normal family size recipe because there are enough of us so we do not have to make party-size portions.

What can I make? and, I thank you for any suggestions in advance.

    I'd suggest white chocolate macadamia cookies but it sounds like macadamias are already covered. How about this:
    COCONUT PECAN SQUARES
    Crust:
    1/2 cup butter
    1/2 cup dark brown sugar (packed)
    1 cup flour.

    Cream butter w/brown sugar & add flour. Mix well.
    Press mixture into a greased 8x8" pan, spreading dough evenly into the corners. Bake in a preheated 350° oven for 20 minutes.

    Topping:
    2 eggs
    1 cup light brown sugar (packed)
    1 cup coarsely chopped pecans
    1/2 cup coconut, mixed with 2 TBL flour
    1 tsp vanilla
    Dash of salt
    Powdered sugar

    Beat eggs well. Add brown sugar & beat until thick. Stir in pecans & coconut. Add vanilla & salt. Mix well. Spread over crust. Bake at 350° for 20 minutes or until well browned. Sprinkle with powdered sugar & cool. Cut into 1" squares.~~Bound to Please

    PINEAPPLE BLUEBERRY COBBLER
    1 fresh pineapple
    1 1/2 cups fresh blueberries
    1 1/2 cups sugar
    1 cup self-rising flour
    1 cup milk
    1 stick butter, melted
    1 tsp cinnamon, ground
    1/4 tsp ground ginger
    1/8 tsp ground nutmeg

    Peel, core & cut up pineapple into bite-sized chunks. Add to fresh blueberries. Sprinkle 3/4 cup sugar over fruit & then mix together. Set fruit mixture aside. In a large bowl, mix flour, 3/4 cup sugar, spices & milk. Place melted butter in 2 qt pan. Pour flour mixture over butter. Place sweetened fruit mix over flour mixture. Bake in a preheated 350° oven for about 1 hour or until brown. Can be served with whipped cream or ice cream.~~Kitchen Miracles

    How about this: TROPICAL CITRUS CAKE

    1 box yellow cake mix
    1 small can mandarin oranges, including juice
    1 cup egg beaters
    1/4 cup applesauce
    Beat 30 second on low then 2 minutes on medium. Pour into greased 13x9 pan and bake at 350 degrees for approx. 25-30 minutes - let cool completely then frost with topping.

    TOPPING:
    1 (15oz) can crushed pineapples
    1 (8oz) container lite cool whip
    1 small pkg instant vanilla pudding.

    Mix altogether & frost cake.

    Have fun at your party!!!

    I put on a Luau at our clubhouse last summer. For one of the desserts I made chocolate covered bananas on a stick! They were the hit of the day.
    Following the directions for melting the chips in the microwave,(I used milk chocolate but semi-sweet is good also)-I kept the melted chocolate over a pot of warm water to keep it melted.
    I cut my bananas in half-crossways (I had 160 at the luau) and rolled them in a mixture of OJ & lemon juice, drained & patted dry w/paper toweling. Have a cookie sheet(s) lined with parchment paper or waxed paper ready. Insert a wooden skewer in the cut end of the banana. Tilt the bowl of chocolate & dip the fruit, carefully spinning off the excess. I also crushed up macademia nuts & rolled them in those & place on cookie sheets. Place sheet in freezer until dessert time.
    I also made Pineapple Upsidedown Cake, Hawaiian Rice pudding (added some coconut cream in w/the milk) & Fresh Fruit in a watermelon shell, and poured some vodka over it. Oh & I made banana cream pies.
