I am l@@king for the best ever chocolate cookie, one that you sprinkle sugar on top of cookies before baking. Or any other really good chocolate cookie that your family keeps coming back for. Thanks.

I've made these & I don't think you'll be disappointed. Just make sure the dough is well chilled & coat them pretty heavily with sugar.

Thanks, Ginger! These sound good to me too. I've captured these plus your crab cake recipe (which sounds the simplest and best to me). Thanks! Linda

Mmmm..... I like the "dark cocoa" and the "[chocolate chips & peppermint extract]" ideas. Captured them too. Mmmm.....

No sugar topping on these but they are soft, fudgy & moist.

    Chocolate Espresso Cookies

    ½ cup cocoa
    2 cup semi-sweet chocolate chips
    1 stick (½ cup) butter
    3 large eggs
    1 cup sugar
2 teaspoons finely ground coffee beans
    ¾ cup all-purpose flour
    1/3 teaspoon baking powder
    ¼ teaspoon salt

Preheat oven to 350°. Line baking sheet with Parchment paper or grease. Melt butter over low heat and stir in 1 cup of chocolate chips until smooth; remove from heat and stir in cocoa. In a electric mixer bowl beat eggs, sugar and ground coffee on high speed until very thick, pale and mixture forms a ribbon when beaters are lifted, about 5 minutes. Beat in chocolate mixture. Sift in flour, baking powder and salt stirring by had just until combined. Fold in remaining chocolate chips. Drop batter by heaping tablespoons about 2-inches apart onto baking sheets. Bake in middle of oven 8 to 10 minutes until puffed and cracked on top. Do not over bake. Cool on baking sheet at least 1 minute. Cool completely on rack. Makes 40 cookies
