LOOKING for: cheesecake question

Posted by jennapoofers (My Page) on

I've just started making cheesecakes. I'm not a fan, but apparently, I make them well. So friends and family are ordering. But I only have one springform pan. I want to lessen my work load. I want to mix the filling of two like cakes at the same time. But I can't bake them at the same time. So my question is, can I (or should I) refrigerate the cheesecake filling while my first cake is baking... while I'm waiting to use the pan?

I would put the unbaked portion in the refrigerator until 30 minutes before the first cake is done.
I'm making two cheesecakes for Easter and using pie plates.

I would buy another springform and use the oven to do two cakes at the same time.
