| My mom posted one of her favorites on that site... 2-Layer Pumpkin Pie http://recipesfromthehome.com/htms/dess01.html * 3 oz. package cream cheese, softeneed * 1 cup and 1 tbsp. half and half or milk * 1 tbsp. sugar * 1 1/2 cup thawed Cool Whip * 1 graham cracker crust * 2 packages instant vanilla pudding * 16 oz. can pumpkin * 1 tsp. cinnamon * 1/2 tsp. ground ginger * 1/4 tsp. ground cloves/li> Mix cream cheese, 1 tbsp half and half or milk, and sugar with wire whisk until smooth. Gently stire in cool whip. Spread mixture on bottom of pie crust. Pour 1 cup half and half or milk into bowl. Add pudding. Beat until blended. Let sit for 3 minutes. Stir in pumpkin and spices. Mix well. Spread mixture over cream cheese layer. Refrigerate at least 2 hours. Garnish with whipped cream. |
