| I'm always working on Easter but this is a really good recipe & Easter always means coconut to me: COCONUT CARAMEL FLAN (serves 6-8 1 1/2 cups sugar 1/2 cup water 2 1/4 cups whipping cream 3/4 cup cream of coconut 3 eggs + 3 egg yolks 3/4 cup sweetened flaked coconut 1 tsp almond extract 1/4 cup sliced almonds, toaste 1/4 cup sweetened flaked coconut, toasted Heat sugar & water in a medium saucepan over low heat, stirring occasionally until sugar is dissolved. Increase heat & boil until sugar caramelizes (about 10 minutes but make sure it doesn't burn.) Pour immediately into souffle dish. Swirl in dish to cover bottom & part of sides. Bring cream & cream of coconut to a boil in a heavy saucepan; remove from heat & set aside. Beat eggs & yolks until thick. Gradually add to hot cream mixture. Stir in 3/4 cup coconut & almond extract. Pour into prepared souffle dish. Place dish in a large roasting pan. Add enough water to teh roasting pan to reach halfway up sides of souffle dish. Bake until a toothpick comes out clean. Cool to room temperature; cover & chill. To serve, invert flan onto platter & sprinkle w/toasted almonds & 1/4 cup toasted flaked coconut. (You can toast the coconut in a nonstick skillet over medium low heat, watching carefully & stirring.)~~Food for Thought |
