Diane's Home Cookin 4.8 Chapter: Cookies

Filled Cookies Recipe

1 C. sugar
1/2 C. shortening
1 egg, beaten slightly
1/2 C. milk, buttermilk or evaporated milk
1 tsp. vanilla
3 1/2 C. flour
3 tsp. baking powder
1/2 tsp. salt

Preheat oven to 375--grease cookie sheets or line with parchament paper.
Cream shortening & sugar--mix in egg,vanilla & milk, then combined dry ingredients. Roll about 1/4 in thick, cut into rounds and place 1/2 of cut outs on greased pan. Place a teaspoon of filling in CENTER of each, place
another cookie on top, press down the edges, and bake until slightly golden, about 12 min--Cool on racks & dust with confectioners sugar.
Raisin filling:
1/2 cup sugar
1 tablespoon flour
1 cup chopped raisins
1/2 cup water

Mix ingredients and cook over med heat until thick--stirring cionstantly.Any dried fruit can be used--apricots, prunes etc--or any jam or canned pie filling.
