RECIPE: Apple (or Carrot) Oatmeal Muffins

Apple (or Carrot) Oatmeal Muffins

1 cups all-purpose flour
1 cups rolled oats
tsp salt
1 tsp cinnamon
tsp allspice
tsp baking soda
1 Tbsp baking powder
1 cup packed brown sugar
2 eggs
1 tsp vanilla extract
1/3 cup applesauce (little container)
cup oil
1 cup milk
1 cup grated apple or grated carrot

Preheat oven to 350 degrees F. Combine all the dry ingredients together and mix with a whisk.

In a large bowl, mix together the brown sugar, eggs, vanilla, applesauce, oil, and milk. Stir in (by hand) the grated apple or carrot. Add the dry ingredients all at once and stir (by hand) until just combined, do not overmix.

Pour into 12 paper-lined muffin pan and bake for 25 minutes, or until toothpick inserted in center comes out clean.
