LOOKING for: gooseberry pies

I would like to try any recipes.

Please put what gooseberry you put in the pie.

I just make a gooseberry pie like i make any berry pie, I mix sugar and flour and mix with the berrys in an unbaked pie shell and top with another crust, cut holes and bake!
How much sugar and flour depends on how sweet the berries are how juich, fresh or frozen, how big a pie I am making etc.
I have eaten a gooseberry pie made like a rhubarb cream pie, with egg yolks mixed with the sugar, but never made one.

Gooseberry Meringue Pie
2 cups gooseberries
1/2 cup water
1 cup sugar
1/4 cup flour
1/8 teaspoon salt
23cm baked pastry shell
2 egg whites, beaten stiff
4 tablespoons sugar

Cook gooseberries in water until tender. Mix 1 cup sugar, flour and salt. Add to gooseberries, cook until thick. Cool. Pour into baked shell. Spread with meringue made of egg whites and sugar. Bake at 180C 12-15 minutes.

Please send me a slice!! I can't get gooseberries here - Cape Gooseberries, I mean. I did have some seeds, and grew a plant or two, but it vanished when somebody came to help me in the garden - and thought they were weeds!! I never had enough to make a pie with, though. Not even a small one. Sob.
