Curtain/Shade ideas for french doors

I've just moved into a home in Maine with older, I'd say builder-style french doors on all three levels. They came with this track system, and what I have called "spaghetti noodles" hanging from plastic tabs. I have never seen these before and don't know what they're called.

I have a few questions about them:

- what are the spaghetti noodles?
- does it seem like this track system could be converted to curtains or do we need new ones?
- is there a decent thermal option for french doors besides a double-curtain system? Like, would roman shades be a remote possibility? The house was built in 1977 and long curtains are a little fussy for the lines, especially in the living room where there are four adjacent french doors taking up most of the wall.

Would love any experiences/wisdom in making french doors a little warmer.
