Rustic Alder as a cost effective replacement to Cherry or Walnut?

So my first choice cabinet maker quote came back 15K higher than my price limit and 14K higher than my less expensive 2nd choice cabinet maker. To avoid going into great detail my first choice has better customer service and inset cabinets going for them. The 2nd choice has neither. But 14K difference meant it was pretty much no contest, right?

But the first choice cabinet maker told me to consider the option of changing my large walnut kitchen Island and my beautiful cherry Master Bath double vanity to rustic alder instead. Saying there would be a few knots and things but that they take dark stain beautifully and I might still love the look.

He said it would save me about 2300K. Takes a small chunk out of 15 over budget. But worth considering I suppose.

Any opinions? I will look at pictures. Just wondered if anyone felt strongly that I would or wouldn't like the compromise. Would the dark stain tone down the "rustic" enough, I wonder?
