If possible, get planks that have a variation of shades, or that have a "natural" finish so that you can see variations in color.

I had a similar situation to yours. Just installed red oak hardwood floors this summer. The professional installer suggested that I use a natural or clear finish so that the different colors would work with the wood trim already in the house. I have a variety of wood furniture in different stains, so this also allows those pieces to "work" with the flooring.

I disagree with Kees Lover, whose floors are very pretty but which would not look good at all in my house. I hope that will not put me in even worse standing here than I already am for stating my honest opinions, but I digress.

Honey oak floors are very pretty. Try not to get a plethora of color in your house. Stick to the honey oak. You can paint later if you like, and the off-white paint of trim will be lovely with oak floors.

Honey oak flooring has been, for centuries, traditional and it will remain so. It's just that all these other colors now are trendy but it is hard to decorate with them. If you start getting too many colors, like multiple colors of wood planks in the flooring and then the variety of wood colors in your house, it is jarring and distracting.

I also think honey oak flooring is beautiful. If you can get it in shades that look nice with your trim, then you'll be just fine. In my home's case, I didn't want to remove all of the trim, baseboard, cabinetry, and doors (all stained this somewhat walnut color). The honey oak flooring would not have worked very well and would have clashed.

I thought, if you were in the same position that I am, try something similar. Most oak flooring was left in the "natural" state (unstained without sealant) until the modern era.

As patricia43 said, you need to see what works in your house.

If you are unsure, maybe you could post pics of the flooring samples next to the baseboard and get other forum members' opinions?
