soffit, fur down, pia?

Pardon the incredible mess. My minor kitchen reno is turning out to be a huge and messy project. I scraped the popcorn off the ceiling and hired someone to float it, still need to prime and paint. I am painting the cabinets white (hence the wet doors all over my house and garage) and the walls, ? don't know what color yet- waiting for soapstone to decide. I am thinking about putting molding and crown mold on the soffit which hangs over the cabinets about an inch and a half. Will this look weird over the sink? should I paint the soffit to match the walls or the cabinets? .
2nd dilemma: ordering hardware for cabinets. Since faucet is an old fashioned chrome should the knobs cup pulls and hinges be chrome also or satin nickel? Because the hinges show I decided against a really dark color.
#3: I want a simple backsplash. Is subway tile the only way to go for that old fashioned look?

Do you mean to put molding and crown mold at the top of the soffit at the ceiling? Or at the bottom under the edge of the soffit?

Yes, add crown between cabinets and soffit. Wrap the crown around the corner of the cabinet and then run it along the wall above the windows, and picking up the other cabinets too.

The faucet may be chrome, but the sink is stainless, so satin will work well. You could always fill the holes and paint over them and get the inside mount, European hinges if you didn't want them to show.

Subway tile is one way, but so are plain ceramic squares, or even mosaic squares. But get the counter done first. Backsplash is last after everything else.

Both: crown at the top and something small and narrow at the bottom. The bottom edge is kind of uneven seems to need something to define it. I've seen people frame out the soffit so it looks like an extension of the cabinet, but since it continues over the sink don't know if that would look silly. Or even if crown molding would just look silly in such a simple kitchen.
