Dining room & molding end caps on half walls

We are about to add a chair rail, picture frame molding, and paint our dining room red! My husband wants to cap off the ends of the open walls with casing/moldings... Looking for any suggestions on what would work best? (excuse the clutter - we are doing other renovations and the dining room has become a catch all for stuff temporarily!)
