We replaced two large fluorescent boxes with two sets of track lights in our kitchen -- inexpensive and provided lots of lights that could be positioned where we need them! :)

Check out track lighting on sites like Lowes or Home Depot .....

I like the two fans idea. BUT, we got a smallish fan, light bulbs are really expensive. Had I known that, I'd have picked another.
Having taken popcorn off a ceiling, with fan in place, I'd say remove fan first. Wasn't in my bag of tricks to take it down, even wrapped, it was H**l to clean. Good luck, hope it comes out the was you want it to.

Is a breeze/wind (from fans) in a craft room a good idea??

Why no just replace the casings with something nice looking (see pic) and replace the fluorescent tube bulbs with LED tube bulbs, which are very expensive but will give off very good light and will last forever?

Fans and recessed lighting can be tricky. The fans can cause flickering shadows if they are between you and the light source. We had this combo in a former kitchen and it was very irritating. This isn't as much of a problem with your current fixtures because they are so long, sit slightly proud of the ceiling, and are fluorescent, which is a more diffused light.

You may find you cannot use both the fans and the recessed light at the same line. or that you need to go with pendant lights instead of recessed, which would be a pretty odd look..
