I love those granite remnants. We have used the large sink cut outs for tabletops on our porch. I bought wrought iron plants stands for them. We had some smaller round pieces from a vessel sink install that I used for stepping stones into our doggy door. I like the idea of a small cutting board. too heavy to pick up and move to the sink to wash, though I guess they can be cleaned in place.

I use them for hot pot pads on the breakfast room table and to give the bar or island the look of elevation/depth, a "riser" look,.

I think you will ruin your knives if you use it for a cutting board. Does it have felt on the bottom so it does not scratch the island? If not, you will need to do that.
