How to size Low Profile Picture light?

We are building, and the electricians are there now running all our wiring.
I've decided to have some eyeballs to light some of our artwork, but some of the architecture defies the best of intentions to put in an eyeball. So I've started looking at the low profile picture lights
I've currently got wiring going in for one in our main living room, and one for the painting over the bed.

How does one pick the size of the light fixture itself?
It seems they typically come in 8", 16", 24" and 30" lamps.

, and it looks as if the extension from the wall telescopes to 11".

I have a large (maybe 40-48" almost square) oil painting, (*Painting is "Moroccan Rhapsody", original oil by James Brandess, Saugatauk, MI), bright, highly textured with a lot of palette knife technique, that is best viewed from a distance. We are planning to hang it high, over the French doors in the living room. Do I light it with the 24" fixture or the 30" or is neither adequate? I've looked and there just isn't any information I can find about sizing.
