Calaphon commercial anodized vs Tri ply stainless

we have an ancient set of Calaphon--interior surface warm, but have served us well.

Would Stainless Tri ply have materially better or different cooking performance?

Have no particular desire for non stick

Allot of Cooks swear by the Tri Ply Stainless. If you have no concern about the non stick properties there are a number of options for you.
