Vintage Westinghouse Turkey Roaster

I borrowed this from a friend. Have a few questions concerning cooking a turkey. Do you cook in the gray or the black part? Do you add any water or liquid to the roaster? Would love to have opinions, input on this roaster. Thank you. Betsy.
