 o
Kasumi: a shun alternative?

Posted by ajmorrow (My Page) on

So, since i will be working in a kitchen, and my knife set is pretty shabby now, i decided to upgrade, 500 dollars worth!

I went to my favourite restaurant supply store and picked up three kasumi knives

the 8inch chef, slicer, and a smaller 5 or so inch utility knife

they hold extremely comfortably in my hand, i have to say after all of the knives i have held, the kasumi and henckle ceramix series were very comfortable, but the henckle a little too handle heavy for me, even with the composite handle.

the workmanship is beautiful, with the damacus layer blade

the cutting edge is the same vg-10 steel that shun uses and the knives come razor sharp out of the box

i used them a little last night and was extremely impressed so far, very comfortable

impressions after working in a fine dining kitchen for a couple weeks will come

I understand that Kasumi knives are very fine knives. I don't understand, however, why they are an "alternative" to Shun. Shun knives are of slightly higher quality, and lower in price. Why should we be interested in an "alternative" that costs more and gives us somewhat less?

The way I used the word "quality" in the previous post didn't come out meaning what I wanted it to. The quality of the steel in both knives is, AFIK, identical--it comes from the same source. The Shun knives are a bit nicer and more expensive to construct because of the way the steel comes through the handle and forms a cap on the end of the handle--that's what I was referring to when I wrote "higher quality", and that isn't really "quality", it's just "features."

pardon me, how silly do i feel! i had no idea they retailed for me, i assumed after reading that the more popular shun would be more expensive

well beyond that, i have spent about 30 hours using them last week, so far so good! they are incredibly comfortable, incredibly sharp, build quality is excellent
