Is there a difference in the taste or texture of the food when you cook on a griddle ( http://www.dvorsons.com/ChefKing/Griddles.htm ) versus using either a non stick or stainless pan? I am using my All Clad pans and I can't seem to match the taste I get when I go out to the local Diner for eggs and pancakes. Whats the deal???

Probably because the stuff you're cooking at home is healthier than what you're getting at a diner.

IOW, it's not your cookware. Fat = flavor...

I was thinking of the same as Joe.

agreed my guess is that you are not using nearly as much grease/lard/butter as the diner that is what makes diner food so tasty---- unthinkable amounts of saturated fats
