I have a Italia Pasta Express X600 pasta making machine.
I have the vcr tape user guide but I have misplaced the recipe/manual book. Does anyone out there have a copy of this manual??
I would be happy to pay you to copy it for me.

I would take Anthony's advice of seeing how the whole process unfolds, but it will still take a bit of experimentation on your part...

Sorry for the late answer, but I just found the X600 owners manual at manualfox.com
I asked them to find it and they emailed me back within 1 business day.
