Eggplant.

I succumbed to the siren lure of egg plant....when in reality I am not going to eat the whole one all by myself.....and I've had it for 3 days!

Family arrives Thursday ( be the Good Lord willin and the snow doesn't fly!) I am thinking of baba ghanouje or however it's spelled....or eggplant caponata.

If I make one or the other tonight or tomorrow, how long will it keep?

Sounds kind of iffy. Probably be ok, but personally, I'd roast the eggplant and freeze it right in the skin, then take it out and make the babaganouje. I freeze quite a bit of eggplant like that. Seems to affect texture least.

Hmm.....just put the whole thing into the oven? Prick it of course.....
How long?
Then freeze the whole thing? In the skin? or scoop out and freeze the pulp?

Please read the label on Sevin very carefully, and consider the consequences of using a non discriminant pesticide in your garden. Sevin kills many types of insects including bees. I personally know of a local apple farmer that lost all of his bee hives. We think due to his use of Sevin on his apple trees to control gypsy moths. He did not heed the warning, and treated the trees, then found the hives were dead the same year! Now he has nice trees, but his pollinators are all gone, so the net result is less fruit produced. I would recommend finding a natural, organic, and especially bee safe product, as bees are required to pollinate the Eggplant.

I have no experience with this kink of eggplant. But I have japanese type. Usually it will take about two weeks for small eggplants to be harvestable. Now that you have picked one at a given size, wait and pick one when it is a little bigger. But generally if the color is consistant aand shiny, you can pick eggplants but then you may not get a big bang for the buck. It is just like cucumbers; smaller ones are tastier. Unlike tomatoes, eggplants do not need to get ripe. If they get ripe then the seeds will harden and will become more spongy.

I've wondered about this because my peppers bought at Krogers always have small peppers inside. And, I've assumed it's because they're not farm fresh. That little pepper inside a bigger pepper is called an “internal proliferation.” Its form can vary from irregular and contorted to a near-perfect but sterile fruit. Yes..whole thing, unless it's really bit then I cut in half and put cut side down with a little oil on pan. It varies by size how long of course but just cook till it's really soft. They generally look like flat tire. Just meaning they collapse when fully cooked. Twenty minutes to forty or more. I leave in skin until I unfreeze it as it seems to protect the flesh better, plus you can pretty much just peel the skin off or scrape out easily.
