I don't have a good one. I don't even like chestnuts. I tried them once - from a street vendor in Geneva. Was it fall? Was it around Christmas? Don't remember any more. Anyway, it was once too many.

But since you've got no response so far, I ran a search and here's what seems like a step-by-step (easy it ain't and can't possibly be) recipe in the link attached.

I'm not crazy about chestnuts, I think they are just "OK". In fact, I think they taste a bit like squash and not like nuts at all. Plus, they are a pain to peel, LOL.

We have a "pick your own" chestnut orchard locally, so we've roasted chestnuts and I made a batch of spiced chestnuts last year, but never made any candied ones.

So, agmss, did you ever make the chestnuts?

Here are a couple of recipes that I have tucked away in my cookbook. I did make marzipan one christmas to make minature fruits for decorating a cookie tray. It worked out well. Don't know about the total yeld, but think you could make a couple of batches.....or adjust the ingredients to suit your purpose. (Bought some marzipan once, but it did not have a good taste, so it was a waste of good money. That is when I decided to make my own!) ALMOND PASTE 100 g blanched almonds 100 g icing sugar egg white 2 ml almond extract Grate the almonds finely and mix with the sieved icing sugar in a bowl. Mix in egg white, little at a time, until you get a soft and kneadable mixture. Add the almond extract and continue kneading with your hands. Wrap the almond paste tightly in plastic. Use it to make candies, to cover cakes or to fill traditional Finnish shrove buns. Almond paste may be coloured and flavoured with food colourings, cocoa powder and various essences and extracts. There is enormous confusion about the difference between what we call "almond paste"and what some confectioners call "marzipan," and candy manuals are not much help. Some would say our recipe is one for marzipan, others would say, that it's almond paste. But whatever name, you can use the paste made by this recipe in pastry and cake fillings, as well as to make small candy shapes that you can tint, using a small brush and food coloring. The advantage of making your own, over most of the versions available in shops is the absence of inexpensive fillers and excessive bitter almond extract that compromise the delicacy of the flavor. Those with nineteenth century leanings might prefer rose water to the almond extract in the recipe. (Nice for wedding or special cakes.) Well wrapped and refrigerated, the paste will keep for many months. .1/2 pound whole, blanched Almonds 2 tablespoons Water (for processing almonds) 1 cup Sugar 1/2 cup Water (for the syrup) 2 tablespoons Light Corn Syrup 1/2 teaspoon Almond Extract, or more to taste Preheat the oven to 250 degrees and spread the blanched almonds on a baking sheet. Bake, stirring frequently, until they are heated through but not browned. While the almonds are still hot, put them into the container of a blender or food processor and grind them as fine as possible, adding the 2 tablespoons water gradually and stopping to scrape down the sides of the container occasionally. When you pinch a bit and feel no coarse grain, the nuts are fine enough. In a small saucepan, combine the sugar, 1/2 cup water, and corn syrup. Boil without stirring until the syrup reaches 235 degrees on a candy thermometer. Remove from heat and stir in the flavoring. Start the blender (or food processor) and add the hot syrup in a thin stream through the feeder opening in the cover. Continue to process until the mixture is uniform. Cool the almond paste and pack it into a jar, or wrap it in plastic, allow it to ripen in the refrigerator for a week or so before using it. (If necessary to soften the almond paste after storage, heat it, wrapped in foil, in a steamer over boiling water, or put it unwrapped in the upper part of a double boiler over boiling water, just until it is pliable enough to use.)

Hi Stacy. I wouldn't worry too much about the demi glace , I use way more of the stock and brown sauce. I only use the demi glace in beef bouguionne and stroganoff but the brown sauce works just fine in both. For gravy I make a roux of equal part flour and butter, thicken with beef stock to the consistency you like and then add enough brown sauce to enrich the flavour ( I usually use about 1/2 c brown sauce to a cup of stock...about : ) It's a great way to make a rich gravy for things that don't have their own drippings,like meatloaf or Shepherd's pie. I also add the brown sauce to my stroganoff and add it to any type of stew , like bourguionne if I don't have any demi glace. Other favourite uses are as a base for meat sauces. I actually wing them now but here are some base recipes. Hunter Sauce (Mushroom Sauce) 2 Tbsp chopped shallots 1 cup sliced mushrooms 1/2 cup white wine 1 cup brown sauce 1 tsp chopped parsley. Saute the shallots in butter or olive oil until tender but not brown. Add the mushroom and saute for about 2 minutes. Add the wine, simmer until reduced by about half. Add the brown sauce. Cook for 5 minutes . Correct the seasoning and add chopped parsley. NOTE: Original recipe calls for 1/2 cup tomato sauce but I don't use it Madeira Sauce (Great with filet or prime rib) 1 cup brown sauce 1/4 cup Madeira (or you could use Marsala or Port) 1 TBSP butter Mix the brown sauce and Madeira bring to the boil and reduce to a simmer. Swirl in the butter just before serving. DO NOT let it return to the boil after adding the butter. NOTE: This can be made on it's own but I like it best made in the pan the meat was cooked in so I can use all those great drippings. Just add the brown sauce to the dripping, bring to a boil, add the Madeira, or whatever you are using, simmer until slightly reduced. Finish off with the butter. That's how I made the sauce for the Filet with Shallots and Port. Lyonnaise or Onion Sauce (We like this mixed in with leftover meat beef or pork and served with mashed potatoes. Or used on top of Salisbury steak or meatloaf. It is also the base for my French Onion Soup) 1 or 2 onions sliced thin butter or olive oil 1/2 cup white wine 1 cup brown sauce chopped parsley. Caramelize the onions in the butter. Add the wine and reduce by half. Add the brown sauce. Simmer for 15 minutes then add the parsley. NOTE: I use this for my French Onion Soup. I use 3 onions instead of 2 and add a couple of cups of beef stock to the sauce until it is the consistency I want for soup. I omit the parsley if making soup and use sherry instead of wine. Hope this helps. PS: We have the same storm but it's a snow event here.....

Thanks Chase, I'll sacrifice the shank slices I was going to use for soup and add them to the bones. I would think that three pounds of very meaty shank would be enough to add to six pounds of bones, is that OK? FOAS, in our main stream markets beef shank is $5.99 a pound so a real find at the Mexican supermarket for $2.69. Maybe I'll go back and look at their "soup bones" which were the odd shaped chunks. Our markets mark down meat too, but only by about 25%. The Mexican market is still my best choice. I looked at several videos, including a four part one from a cooking school with a huge kitchen and they all used clean bones, but I know that Chase has been making demi-glace for a long time and I trust her choices. In our house, there is no such thing as steak or roast bones with meat left on them and I think Max would know I was crazy if I asked him to give up chewing the bones. L

Annie - not yet. I seem to be on a chestnut tear since Thanksgiving. I ended up buying 10 lbs from a farm in the NW for Christmas. Gifts, roasted, boiled and chocolate covered. I still want to make chestnut/squash soup and maybe marron glacee..

I went to the reception for art show last winter - part of a series of shows of woman artists in Maine. One woman had a series of pieces about the loss of the american chestnut and her Appalachian family's long history with them. Evocative images. So I have been thinking about the loss of such a large part of the eastern US forest - and a food so many poor people depended on..... and off I go on a food tangent.

agmss, believe it or not, here in Michigan we had an old American Chestnut tree. The American Chestnut foundation had Dad send in pieces of leaves and bark for identification and for research, apparently some trees were naturally immune/resistant to the blight that killed the trees. This one is/was also outside of the normally recognized growing range, although not by much, and it appears that isolated trees spread from those few in southeast Michigan. This map shows the counties where trees have been found, including mine.

Of course, that started a fire under Dad, who was determined to single handedly revive the chestnut, LOL. He carefully planted every single nut he could get his hands on. When one grew, he would plant it somewhere in the Manistee National Forest, his rationale was that if he planted them far enough apart, they couldn't get the fungus from each other.

I've looked for the old tree, but cannot find it, or at least haven't found it yet, but Dad sent a chestnut to school with Ashley once for science class, still surrounded in its prickly coat. Not a single student knew what it was, sadly.

The local orchard is a hybrid type, which resists the blight, but it's not an American Chestnut, it's an Asian type I think.

My dad did the same with some black walnut seed from a tree growing in Maine maybe 25-30 years ago. We are a little north of their range. In his case he was thinking of future lumber. He never transplanted his nursery bed so we thinned it a few years before he died. His seedlings are producing seed - so future woodworkers might be harvesting from his little project. My mother made some walnut ink. My stepsister was going to attempt worchester sauce.

Back to chestnuts I will try to get one at Fedco next spring. My mom has one coming along but it's neighbors need taming. A semi-local writer/naturalist Bernd Heinrich just wrote an NYT article about chestnuts spreading through his woods in western Maine from seeds of trees he planted. Neat.

When I was in Paris, that was my favorite street food. Roasted chestnuts.

"Hot chestnuts! Hot sugar sand roasted chestnut!"
And street food when I was in China.

There are more then one kind of chestnuts. The big ones they sell here do not have very much flavor and less sweet. Still I like them. Just made a lot of chestnut stuffing for last night's Christmas dinner.

I like them. Especially this time of year in the city. They have an aroma unmatched. Very nice with mushrooms in a dressing with wild rice. I don't really seek them out. Here they are and i will give it a try and complain a bit as they are often a disappointment in peeling and getting just right. I still see them in the grocery but i've had my holiday attempt this year....one weird batch and an okay success. The history is fascinating as the above stories tell...

Peel 1KG chestnuts and cook in boiling water for no longer than 15mins. less if you couldn't get nice big ones.
Bring to the boil 1.5 litres water and 1.5kgs sugar. Add a split vanilla pod. Add your nuts, preferably in a basket for easy removal. Simmer 3 minutes and stop the heat. leave them to cool in the syrup 24 hours. The next day, remove them while you bring the syrup to tbe boil. Add nuts and simmer 3 minutes. Cool 24 hours. Repeat twice more, then remove from srup and leave to harden on waxed paper.

Syrup is finally thickening.

Whether or not I like the result - the vanilla syrup is delicious. I don't usually like purely sweet food but this is amazing. I used vanilla bean paste instead of a vanilla bean.
