What to do with dried out chicken breasts?

I put a pan of chicken pieces in the oven with a digital probe sensor in the breasts. Too bad I forgot to turn the alarm on! The thighs are fine, but the breasts are somewhat dry. Is there some dish or method that I could use to rehydrate these a bit? I did pour a tablespoon or two of the broth over them before refrigerating.

Nope, they're "toast". But if you have a dog they sure wouldn't mind the chicken jerky.

soup???

dice fine enough to make chix salad ... enough salad dressing will rehydrate anything... lol ...

dice and add to bacon fat ... and call them chicken bacon bits for salad ..

ok.. i was bored.. so i offer some useless thoughts ...

think outside the box ...

Shannon: Sorry I was away for a week. Next time you do this and you like Stuffing, Stand them on edge, in an alluminum pie pan and bend the side up a little, to fit the breasts. Stick 4 skewers in the ends, on top, so you can tie them together, Leaving a space between for stuffing. The bottom shouuld be a little wider, so they won't fall over. Just bake them as you would a Chicken. You could also lay some bacon strips across the top. Here is a Photo of 2 Breasts; that I baked, with Stuffing. gwanny's recipe: Salsa chicken and black beans 1 jar of your fave salsa 1 can of black beans, drained and rinsed 1-2 cups shredded cheddar or Mexi-blend cheese 4 boneless, skinless chicken breasts Place chicken in baking dish and cover with salsa and beans.***I put the beans in bottom of pan, then top with chicken and salsa, cover and bake at 350 for 35 minutes. Sprinkle cheese over top and let bake another 5 minutes. Moist, yummy chicken!! Serve with a dollop of sour cream on each. This was fabulous!!! Only thing is that our supermarket chicken breasts are so large, I'd cook them for at least 45 minutes before adding cheese. Sour cream is a must.

Countrygal I've never done chicken marinated in buttermilk, but I have done boneless turkey thighs marinated in yogurt. Yogurt will definately work for chicken too. That's a tried and true Middle Eastern technique for grilling. You can add whatever you like to the marinade. I tend to use either a turkish seasoning mix I have or ras el harnout, which is a Moroccan spice mix, but you could use any old seasoning. It's a good way to go for moist flavorful meat, but you still have to watch the meat carefully and not overcook. Below is a link to a typical recipe in the Middle Eastern style. I agree, Louise, I want beef rare. Really rare. gyr, you won't get any flack here either. I often pour a can of Coke or Dr. Pepper over a ham, and then glaze it during the last hour, some of my family likes the really sweet and crunchy outside edges. meyati, I also don't feel that good beef needs any "help", other than salt and pepper. My own ham was nice and moist, with a crunchy outside layer of brown sugar and mustard. I like pineapple but The Princess does not, so I didn't use that. We are having a LOT of leftovers, including some in today's bean soup. dcarch, I'm not a huge fan of ham either, it's definitely something I can take or leave, but the family loves the stuff. My ham wasn't cheaper, though. I bought a whole hog locally for $1.29 a pound, and that included packaging. Since packaging is usually about 50 cents a pound, that made my pig 79 cents a pound, based on hanging weight. However, anything I wanted smoked was an additional 99 cents a pound, so ham costs me nearly $1 a pound more than fresh pork does. Same with bacon. Annie

LOL, they're not quite at the jerky state! DH will eat them, I'd just prefer to improve them if I could, especially because we cooked more breasts than thighs, and I'll have to eat some of them.

Shredded for chicken salad sounds like a good idea. We often shred carnitas with a few pulses in the food processor. The plastic dough blade pulls them apart perfectly.

There is a poblano alfredo sauce we really like, but I was afraid that heating the chicken in that would dry it out further. I really don't know.

I use a meat grinder (attachment for KA) to make ground chicken for chicken salad - I don't know what the FP will do to them. Ken is right about the salad dressing.

You could also add them to a thai coconut curry base -- only at the last moment to heat them through. The fat and spice in the curry will mask the dryness.

What Ken suggests. I'd dice them up and serve with some kind of sauce, either hot or cold. Soup, or pot pie etc.

Chop fine, add breadcrumbs and egg, fry lightly as chicken patties served either on a bun or with gravy and mashed taters.

I have had better results finely chopping chilled chicken in my electric mini-chopper than in a food processor.

I would finely chop some of the breasts along with fresh chives, parsley and celery leaves and mix them with cream cheese, a dash of Worcestershire sauce, salt and pepper for a spread on crackers.

i am so glad you found not only some entertainment in my reply [lol.. chicken jerky].. but enjoyed looking outside the box you were in ...

you were limited to thinking about it intact ... but once shredding it came to mind.. the options opened ...

i have rehydrate stuff in the microwave ... to some extent... covered bowl or baggie ... wet it .. by sprinkling with your hand... and WARM/HEAT it.. and let it stand and suck it up .. DO NOT RECOOK IT... that is where a lot of peeps fail with reheating ... stock or broth would be better than water ...

next thing you know.. you will be over cooking chix on purpose.. lol ...

my whole stay at home dad life.. revolves around timers... havent forgotten a kid anywhere in 16 years ...

but i simply hate it.. when i go to all the trouble of finding the timer... clearing it.. setting it.. and then sticking it in my pocket without turning it on ... lol ... luckily.. after said 16 years... its so ingrained into my system... i barely need the timer .... but its like having blankey .. without it .. i am a stressed wreck ...

Or you could mince it in a food processor and make really good chicken stock, then use that to make soup.

without repeating what's already been said, I will add to use them for something like King Ranch Chicken and other recipes calling for diced up chicken....such as Chicken Helper type casserole dishes. Diced up and served cold over a nice garden salad would be tasty. Diced up in chicken enchiladas?

DH made some chicken salad with it that was very good. After a sandwich yesterday, I decided to heat it tonight. When just heated through, it was delicious. Too bad I left it on low for another minute. At that point the meat was very tough, and the overall flavor had changed.

I'll be ready if I overcook chicken again, but I sure I never have to!
