I need help with my toffee..

I have made toffee numerous times, but yesterday it didn't work out right. It was as if I had a pot of toffee floating in a pool of butter. It harden up right, pretty good consistency, just lots of extra butter.

I basically did 2cups sugar 2 cups butter (4 sticks) heated til 300 degrees.

What am I doing wrong? My only thought it that I used Canyon creek butter instead of Publix or land o lakes.
