Beef for Holiday Party - Got a favorite ???

I am preparing for my annual Holiday gathering with some of my oldest and dearest friends. I mix it up each year and this year I'd like to make a beef rib roast yet I am concerned that it cools so quickly after hitting the plate (even a warmed plate and a hot sauce to go over it).

So I was thinking that perhaps instead I should do individual grilled steaks...beef tenderloin or rib eye or new york strip, etc. Anyway, that seems like the last-minute hassle I am looking to avoid.

I have hired help for the evening, but I am not looking for her to make the steaks, yet I don't want DH out there fussing (although he'd probably enjoy it). Any ideas for how I can accomplish a special-occasion worthy beef roast/steak without the last-minute hassle of grilling steaks? Or maybe I am just obsessing too much.
