My first try at Spritz and questions

I just bought a cookie press (Kitchenaid) at Costco for $15 despite the bad reviews.

It took a few cookies to get used to it -- but then I did not find it hard at all. One thing I learned is I cannot squirt them onto parchment paper -- they don't stick and don't release from the press. They need the plain cookie sheet to stick to.

Anyhow, I used a recipe from Taste of Home that is quite good. My sister always says that spritz are boring and tasteless -- well this recipe had white and brown sugar and almond extract which I thinks give them more flavor.

anyhow -- two questions:

1. I am having a hard time getting the sugar to stick to the cookies before I bake them. Most of the sugar is ending up on the cookie sheet. Any suggestions?

2. I tried kneading green food coloring in part of the dough for Christmas trees. By the time I was done kneading it in, the butter in the dough was getting too soft and I could tell I was way overworking the dough. Is it better to mix in color with the beaters?
